Butchery

It started with one finger.

Why a pork shop in the Klang Valley holds itself to the standard of a wet-market auntie, and what that means for every kilo we deliver.

Chapter one · The market

Six in the morning, under the red lamps.

Most of us learned to buy pork the same way. Someone older took us to the wet market early, before the heat, and showed us what to look for. Press the meat. It should spring back. The fat should be white and firm. If it smells of anything, walk on.

That was the standard. The butcher knew your family, cut what you asked for, and told you when the belly was better tomorrow.

Chapter two · The gap

Then life got busier.

Fewer people have the morning free for the market. Restaurants need the same cut every week, in the same size, without someone driving out at dawn. Supermarket trays are convenient, but you rarely know how long the meat has been sitting there.

We wanted the morning-market standard without the morning trip.

Chapter three · Butchery

So we built a butcher that comes to you.

Butchery buys from local farms, portions and packs every order with care, and keeps the meat between 0 and 4°C until it reaches your kitchen. Home cooks and hawker stalls order from the same cold room.

The finger test is still how we judge ourselves. If a cut fails it when it reaches you, we replace it.

What we hold to

Three rules we don't bend.

1

Local farm, short trip.

The less time pork spends travelling, the better it tastes. We buy local so the meat reaches our block quickly.

2

Every pack weighed and labelled.

Each pack shows the cut and its weight, so what arrives is exactly what you ordered.

3

Cold the whole way.

0–4°C from the cutting room to your door. Fresh pork stays fresh and never sees a freezer.
